Baked Brie
1 small round baby brie 13.2 ounce
1/4 to 1/2 cup Holly Anne's Raspberry Jam
1 sheet puff pastry
Sliced almonds
1 egg
1 T water

Thaw your pastry sheet at room temp for 30 minutes

Preheat oven to 400 degrees
Flour surface and roll out pastry into 14" square
Spread jam into middle of pastry sheet
Top with almonds
Place brie round on top of almonds
Fold pastry around brie and press edges to seal
Carefully turn over and bake seem-side down
Brush with egg and water mixture
Bake 20 minutes on the serving dish
Let sit for 20 minutes

Serve with crackers or sliced apples

 

Raspberry Vinaigrette

2 T Raspberry Vinegar
2 T Holly Anne's Raspberry Jam
1/2 t Dijon mustard
3/4 t sugar
1/2 t salt
6 T Olive Oil
Pepper ground to taste

Salad
6 C salad green
1 C Cranberries - dried
1/2 C pecans
1/2 med Red Onion (slices)
Crumbled Feta Cheese


Linzer Cookies
Cookies:
1  1/2 cup flour
1/2 cup ground almonds
1/2 tsp baking powder
1/4 tsp salt
1/2 tsp ground cinnamon
3/4 cup salted butter, softened
3/4 cup white sugar
2 egg yolks
1 tsp pure vanilla extract
1 tsp pure almond extract

Filling: 1/2 cup Holly Anne's Raspberry Jam
1 tsp grated lemon peel (half a medium lemon)

Topping: 1/4 cup confectioners's sugar
2oz sliced almonds

Preheat oven to 300 F
In amedium bowl combine flour, almonds, baking pwder, salt and cinnamon with wire whisk.

In a large bowl, witha n electric mixer, cream butter and sugar. Add egg yolks, vanilla and almond extracts, and beat at medium speed until light and fluffy.  Add the flour mixture and blend at low speed until just combined. Do not over mix.

Roll dough into 1  1/2 inch balls. Place 2 inches part on ungreased baking sheet.  With index finger, press an indention in center of each ball to hold filling.

Bake 22-24 minutes or until golden brown on bottom.  Transfer toa  cool, flat surface.  In a small bowl combine jam and grated lemon peel. Place 1/2 teaspoon of filling mixture in center of colled cookie. If you wish to add extra decorative tuch, sift confectioners' sugar over cookies and placed sliced almond in the jam.
